Hard Core Carnivore Team Build with JBS Australia

When JBS Australia gave me a call and asked to tailor-make a team building and cooking session for a group eager ex-butchers I was over the moon.

As an ex farm girl I have spent many years at my father’s side learning the art of butchering, and then as my training as a chef I obviously know my way around my cuts.  A few years ago I got a gig training the Coles butchers and taking them through how to recommend to their customers new ideas and ways to cook different cuts of meat.  If you want versatility and how to find your way around the various cuts than I’m your girl.

So custom designing a cooking class just for these meat loving fellas was a dream come true.

My brief was simple.  And simply very exciting.  My wonderful client Robin gave me an amazing list of ingredients to choose from to create the perfect menu for the team of ex-chefs and butchers to come together as foodies and colleagues and have some team building fun.  I could choose ANYTHING from the amazing list of Beef and Lamb suppliers, Primo Smallgoods, Thousand Guineas Shorthorn Beef, Riverina Australian Black Angus and Great Southern to name a few.

The perfect bite…

Mission was accomplished when we decided on my signature dirty black beef with porcini cream for mains, pork belly with perfect crackling, rocket, parmesan and prosciutto towers and my amazing death by chocolate rocky road with pistachio and date bling.

These may sound really difficult but they are absolutely amazingly simple to prepare and great fun was had by all.

I can’t wait to create the perfect menu for you and your team. I can even use your own products in a tea building class designed just for you.
