It’s good to be back at home. No matter how much I love to travel, there is nothing like walking through your own door and sleeping in your own bed. What a fantastic trip I had. I was really besotted with what England had to offer this time round, I’ll be sharing some of my foodie inspirations in a tirade of handy recipes for you to try at home.
One of my most memorable market days was when I stumbled across the most magnificent berry collection I have ever seen. There is something about the climate I suppose where it’s practically refrigerated goods that makes the produce look just too perfect. They delivered on flavour too so that’s the main thing. But with so MANY berries, more than we could eat fresh, I had to make berry pancakes the following day! Of course when I get back to the real world, I’m sure my berries will be coming out of the freezer:)
And here’s the gorgeously easy recipe. I made a Keto recipe too in case you are trying to ward off the holiday hips that always seem to follow a trip away! What a price to pay though so no harm done.
Berry Pancakes
Beautiful Blueberry Pancakes – Keto or traditional
Berry Pancakes
1 cup berries, diced if strawberry or just use whole for any other
200g plain flour
1 teaspoon baking powder
1 egg
300ml buttermilk or milk
50g melted butter
pinch of salt
5ml vanilla extract
2 teaspoons sugar (optional)
Vegetable oil or butter to cook
Syrup, cream or your favourite topping!
Keto Version
1 cup berries, diced if strawberry or just use whole for any other
200g almond meal
60g coconut flour or similar
1 teaspoon gluten free baking powder
4 eggs
100ml cream
250ml water
50g melted butter or coconut oil
pinch of salt
5ml vanilla extract
2 teaspoons sweetener of your choice
Vegetable oil or butter to cook
Syrup, cream or your favourite topping!
For the KETO recipe, I decided to get you to make a bigger batch so you can have some left over batter for a few days time.
Method
Chefs NOTE: You can make this batter the day before your next beach BBQ or picnic and take along and cook on the spot!
Simply place all these ingredients together and stir, no need to complicate! If you are using a NutriBullet or Food Processor, omit the berries and then stir them in once you have the batter. Or else they will puree…
Heat and grease a frying pan over a medium heat. Once nice and hot, pour some of the batter into the pan. Once a nice brown crust has formed, use a suitable size egg lift to flip these over. Do the other side and then remove onto a plate. Stack and serve!
