When you grate it on a standard box grater and pan fry it in a little olive oil, something magic happens: the shreds tumble apart into golden, salty, crunchy nuggets that behave a lot like pangrattato (crispy breadcrumbs) but with far more cheesy flavour. The larger bits keep a slightly chewy centre while the finer crumbs go crispy all the way through.

This crispy shredded halloumi salad is what we call a spoon salad: everything is chopped small enough that every mouthful delivers a bit of kale, rice, pine nuts and halloumi crumble all at once. It is hearty enough to serve as a light meal (add a soft boiled egg on top for extra protein) or as a vegetable and starch side dish in one bowl.

Cooked rice is the starch of choice here because its neutral, chewy texture lets the crispy halloumi shine. Chickpeas and quinoa were tested and found to compete with the halloumi crumbs rather than complement them. Brown rice, wild rice or farro all work well if that is what you have on hand. How Do You Make the Garlic Apple Cider Vinegar Dressing?

Because this salad has lots of small pieces with plenty of surface area, it needs more dressing than a standard leafy salad. The trick is to stretch the dressing without loading it up with extra oil. Here is how the balance works:

  • Apple cider vinegar is milder than white wine vinegar, which means you can use a higher vinegar-to-oil ratio (roughly 1:2 instead of the usual 1:3) without making the dressing lip-puckeringly sharp.
  • Honey (just 1 teaspoon) softens the acidity further.
  • Dijon mustard (only half a teaspoon) emulsifies the dressing so it clings to everything without needing extra oil. You cannot taste it at all.
  • Garlic does the heavy lifting on flavour. Make the dressing first so the garlic has time to meld before you dress the kale.
  • Salt: keep it to just a quarter teaspoon because the halloumi scattered through the salad provides plenty of natural saltiness.

Shake all dressing ingredients in a jar until the honey dissolves completely. White wine vinegar or red wine vinegar are good substitutes for apple cider vinegar, though you may want a touch more oil to balance the sharper tang.

How to Make Crispy Shredded Halloumi Salad: Step by Step

Ingredients (serves 4 as a light meal, 5 to 6 as a side)

  • 225 g halloumi, shredded on a box grater
  • 1.5 tablespoons olive oil
  • 60 ml (1/4 cup) pine nuts (or slivered almonds)
  • 5 tightly packed cups curly kale leaves, stems removed and leaves chopped into roughly 1 to 1.5 cm pieces
  • 1/4 red onion, very finely sliced then roughly chopped
  • 60 ml (1/4 cup) roughly chopped fresh dill (or flat-leaf parsley)
  • 3 cups cooked long-grain white rice (about 1 cup uncooked), warm or cooled

Dressing:

  • 3 tablespoons apple cider vinegar
  • 80 ml (1/3 cup) extra virgin olive oil
  • 1 teaspoon honey
  • 1/2 teaspoon Dijon mustard
  • 1 garlic clove, finely grated
  • 1/4 teaspoon cooking salt
  • 1/8 teaspoon black pepper

Optional: soft boiled eggs, halved, to serve

Method

  1. Make the dressing. Combine all dressing ingredients in a jar, seal and shake until the honey is fully incorporated. Set aside while you prepare everything else so the garlic has time to meld into the dressing.
  2. Toast the pine nuts. Place a large non-stick frying pan over medium heat with no oil. Add the pine nuts and stir regularly for about 3 minutes until they develop light golden spots. Transfer immediately into a bowl to cool. Watch them closely as they can catch quickly.
  3. Make the crispy halloumi crumbs. Return the pan to the stove and increase the heat to medium-high. Add the olive oil. Once hot, add all the shredded halloumi and spread it across the pan. It will release moisture at first and look a little watery. Once that liquid evaporates, stir regularly and let the halloumi colour to a mostly golden or deep golden shade, around 5 minutes. Do not let it go brown. Transfer into a clean bowl. The crumbs will firm up and crisp further as they cool.
  4. Massage the kale. Place the chopped kale and red onion in a large bowl. Pour over about 2 tablespoons of the dressing and use your hands to firmly massage and scrunch the leaves for a minute or two. This both coats the kale and softens its texture. Do not hold back here.
  5. Toss the salad. Add the cooked rice, dill and most of the pine nuts to the kale bowl. Pour over the remaining dressing and toss everything together well until evenly coated.
  6. Plate and top. Spread the salad into a wide, shallow serving bowl to maximise the surface area. Scatter the crispy halloumi crumbs and remaining pine nuts generously over the top. Serve immediately, with halved soft boiled eggs if you like.

Finishing tip: If serving warm, use freshly cooked rice and pop the dressed salad (before topping with halloumi) into the microwave briefly. Add the crispy halloumi crumbs at the very last moment so they stay crunchy.

Can You Meal Prep This Halloumi Salad?

Yes, and it is one of the better meal prep salads around. Store the massaged and dressed kale base (rice included) in one container and keep the halloumi crumbs in a separate airtight container in the fridge. The crumbs stay crispy for days. When you are ready to eat, bring the salad to room temperature or warm it briefly in the microwave, then dress and top with the halloumi crumbs just before eating. It makes a brilliant work lunch.
