Ingredients

  • 1.5 oz top-shelf gin of choice

  • 150ml ginger ale

  • 3 dashes bitters

  • ½ glass of ice

  • 1 cinnamon quill

  • 1 star anise

  • 1 dried apple slice

Method

  1. Place ice into a glass and add the gin and ginger ale.
  2. Stir gently to combine.
  3. Add 3 dashes of bitters across the top.
  4. Finish by garnishing with the dried apple slice, cinnamon quill and star anise. Serve with a reusable straw.

Witches' Broomsticks Prosciutto & Gruyère Twists 

What food pairs well with a ginger and apple cocktail? Rich, salty prosciutto, nuttiness from melted Gruyère cheese, and fresh rosemary mirror the warm, botanical notes of gin and ginger ale. These crispy, flaky puff pastry broomsticks bring a dramatic Halloween aesthetic to your party platter. 

Ingredients

  • 2 sheets frozen puff pastry, thawed

  • 1 tbsp Dijon mustard

  • 100g Gruyère (or sharp cheddar), finely grated 

  • 100g prosciutto slices 

  • 1 tbsp fresh rosemary, finely chopped 

  • 1 egg, beaten (for egg wash) 

  • Grissini breadsticks or pretzels (for the broom handles) 

Method

  1. Prep the base: Preheat your oven to 180°C and line a large baking tray with baking paper. Lay out one sheet of puff pastry and brush thinly with Dijon mustard.
  2. Layer the flavours: Sprinkle over the grated Gruyère and fresh rosemary, then layer the prosciutto evenly across the surface. Top with the second sheet of pastry and press down gently to seal.
  3. Shape the brooms: Cut the pastry rectangle in half horizontally. Then, cut each half vertically into 1.5cm wide strips.
  4. Fringe and twist: Take each strip and gently slice thin vertical "fringes" into the bottom half (to create the bristles of the broomstick). Insert a grissini breadstick into the top, unfringed end, pinching the pastry firmly around it to attach. Twist the top section gently to lock it in place.
  5. Bake to golden perfection: Lay the broomsticks on your prepared tray, brush the pastry with egg wash, and bake for 12–15 minutes until golden, puffed and crisp. Allow to cool slightly on a wire rack before serving warm.
